Hello there and happy belated new year! I’m sure we’re all sick of reading about resolutions at this point so I thought this non-healthy banana bread would be a perfect post to start off the new year on my blog! HA.
I’m not sure if there’s anything better than starting off a slow Monday morning off at home with the smell of bread baking in the oven. I’m not at all a foodie of any sort but I have found baking to be quite a relaxing habit that isn’t work related for me so the kitchen and I are slowly but surely hating each other less these days.
My mom has been making this recipe for years and of course now I’ve adopted it. There’s nothing too special about it (except the comfort I find while baking it IS pretty special to me). It’s quite simple so I thought I would share it here for those of you who are trying to up your game like me and looking for something simple to make.
Ingredients:
1/2 c butter
1 C brown sugar
2 eggs
2 bananas (1/4 c)
1/2 cup nuts (walnuts are my fav)
2 c flour
1 teas. baking soda
1/2 teas. salt
1 teas. vanilla extract
I added a crunched up dark chocolate bar but chocolate chips are always a win as well.
Directions:
Combine ingredients and pour into greased bread pan. Bake at 350 degrees for one hour.
It doesn’t get easier than that…and that is all I can handle!
