Fall has officially arrived here in the Midwest and I’m embracing it with open arms as always. Usually when August 1st hits, I’m looking for fall. Life slows down a bit and it seems like instantly I start to enjoy life a bit more. Last night I baked the pumpkin bars my family has been making for years and they are just so great I had to share the goodness here.
Pumpkin Bars
4 eggs
1/4 cup oil
15 oz. can of pumpkin
2 tsp. baking powder
pinch of salt
1 2/3 cup sugar
1/2 cup margarine
2 cups flour
1 tsp cinnamon
1 tsp baking soda
Bake at 350 for 25-30 minutes in 15″x10″ pan. (I baked mine in an 8″x11″ and they needed to bake for about 10-15 minutes longer)
Frosting
1 3 oz pkg of cream cheese, softened
1/2 cup butter, softened
1 tsp vanilla
2 cups powdered sugar
Frost the bars after letting them cool.

Hi! I wanted to make these however should one baking powder be baking soda? If so which one?
Hi Cindy! Thanks so much for stopping by and catching this error. It should read 2 tsp baking powder 1 tsp baking soda. I’ll make sure to fix this in the post! Happy baking, I’m bringing these to my family’s thanksgiving. I hope they’re a hit for you.
